Wolfgang Zwiener used to work as a head of waiters for over 40 years at an old popular steakhouse in New York. In 2004, he opened his own steakhouse restaurant in Manhattan, New York City. After combining a perfect service and juicy beef steak, he with his son, Peter Zwiener, have brilliantly made one of the best and renowned steakhouse in the world. Due to the tremendous popularity they had when started their first restaurant in New York, they were able to expand the business into 18 more branches worldwide including the newest one in Singapore.

 

Commitment to Aging Meat

 

Beefs are strictly checked by the United States Department of Agriculture(USDA) with the rating of grade 8. In all kinds of beefs that we serve, the highest rating we got from the USDA is our “Prime” beef. It is so rare that even in the United States, only 2% to 3% of the “Prime” grade beefs are distributed. Meats ripen for 28 days, through a consistent temperature and moistness at a private aging warehouse.

Because of a long-term dry aging, the meat will become tender and tasteful. By grilling the aged beef at 900℃ in a microwave oven, the surface will become crispy and fragrant. When the fat and juices exude, a delicious tender juicy beef steak is ready to serve.
